Best teas for iced tea

The first step to making great homemade iced tea is choosing the tea you’ll make your base with.

Below our expert iced tea brewer, Pheobe shares advice on your best options. Follow it closely for a guaranteed balanced iced tea or use it as a guide to get experimental.

When picking the tea to use in iced tea, we have four main considerations – tea variety (black, green or fruit tea), flavour (a no-brainer!), brewing requirements and opportunities for fresh garnishes. Read on for to find your ideal combination, according to your favourite tea type.

Black Tea

Brewing: steep tea in 100°C water for 3–5 minutes.

Black tea is brewing at a high temperature, boiling point, and only needs a short steeping time. This short brewing time is particularly important for iced tea when you want a smooth, pleasant taste. Black teas contain tannins, which, if over brewed, can result in a bitter and overly astringent taste. ​We recommend chilling immediately after brewing. Once cold, add brown sugar, honey or citrus to balance the tannins.​


Assam

Bold, malty, and slightly sweet, it’s the perfect base for iced tea. Add a squeeze of lemon to enhance its malty flavours.

Green Tea

Brewing: steep tea in 80°C water for 2-3 minutes.

Green tea is brewed at a lower temperature for a short duration. The green leaves are more delicate and can become bitter if brewed with boiling water or steeped too long.​ Chill your tea with ice or in the fridge after brewing to preserve delicate flavours. Lastly, pair with fruits like strawberry or peaches for added sweetness.

White Tea

Brewing: steep tea in 80°C water for 2-4 minutes.

White tea is delicate and minimally processed, so they require special care during brewing to preserve their subtle flavours. Boiling water can "burn" the leaves, releasing bitter compounds that ruin the tea’s delicate balance. ​Add iced or chill in the fridge after brewing to avoid over-steeping and preserve delicate flavours. Garnish with restraint, a simple slice of cucumber or melon works a treat.

With no tannins, this tea relies on fruit and herb extracts for flavour, which deepen with longer steeping times. This is perfect for iced tea, because if you like stronger flavours you can simply steep for a longer duration without bitter tastes developing like they might in black or green tea.
